The Metodo Classico sparkling wine 'DT10' Extra Brut represents the most prestigious and exclusive bubble within the fine collection of the Piedmontese Deltetto winery. The appellation 'DT10' refers to the very long ageing of 10 years on the lees, a factor that makes this sparkling wine a 'Degorgement Tardif' of formidable complexity. DT10' was created with the 2010 vintage to celebrate 30 years since the production of the Deltetto family's first sparkling wine, made in 1980 by Antonio Deltetto as a direct consequence of his great passion for the world of bubbles. This limited edition was then presented with just 928 numbered examples.
The Metodo Classico Deltetto 'DT10' Spumante Extra Brut is made from a blend of Pinot Noir and Chardonnay grapes from the Deltetto family's best vineyards. The grapes are cultivated using sustainable practices and are harvested by hand once they have reached the right stage of ripeness. Soft pressing follows, followed by alcoholic fermentation of the must in stainless steel tanks at a controlled temperature of 18 °C. Once ready, the sparkling wine base undergoes re-fermentation in the bottle according to the Metodo Classico, with a very prolonged resting period on the lees for a full 120 months. The process ends with disgorgement and subsequent low dosage as Extra Brut.
Deltetto's sparkling wine 'DT10' Metodo Classico Extra Brut presents itself in the glass with a deep straw yellow appearance and a persistent, very fine perlage. Thebroad, rich and expressive nose profile is defined by ripe tones of pastry and candied pineapple, with hints of lemon peel and fragrant hints of yeast and bread crust to complement. The entry on the palate is full and very intense, surprisingly balanced and vertical, with a very long persistence.
