Meaterra's Metodo Ancestrale Frizzante is a bottle-fermented wine to be appreciated for its brio and tension, the result of a genuine and artisanal production vision. Winemaker Antonino Barraco, known as 'Nino', manages 12 hectares of vineyards with his wife, from which he obtains the grapes for the Meaterra project, born to celebrate the traditional soul of the Marsala territory.
Meaterra Metodo Ancestrale Frizzante is a 100% Grillo that originates on sandy soils located at an altitude of up to 120 metres above sea level. The vines are grown in accordance with the dictates of organic farming and also benefit from the warm, breezy climate that characterises the area. Manual harvesting is followed by white vinification of the grapes through soft pressing and subsequent spontaneous alcoholic fermentation of the must in stainless steel tanks, conducted exclusively by the yeasts present on the grapes and in the cellar environment. Foaming, on the other hand, takes place in the bottle according to the Ancestral Method, bottling the must-wine while it is still fermenting in such a way as to 'trap' the carbon dioxide and thus develop the slight effervescence. This also excludes the use of exogenous sugars. During the entire process, the use of sulphur dioxide is then reduced to a minimum and the use of clarification or filtration is banned.
To the eye, the Frizzante Metodo Ancestrale Meaterra reveals a luminous straw-yellow colour with fine, light bubbles. On the nose, one perceives fragrant aromas of citrus and aromatic herbs, surrounded by a fine mineral vein that highlights the vineyards' proximity to the sea. The progression on the palate is fresh and savoury, with good tension and a well-balanced structure resting on a pleasant citrus finish.
