Catarratto 'Cinque Inverni' is an intense and fine 'orange' that, as its name suggests, goes through five winters before being poured into the calica. The long maceration on the skins precedes a 3-year stay in barrels, the maturation then ends with one more year in the bottle. A wine with a broad and complex profile, the nose reveals hints of dehydrated yellow fruit, Mediterranean scrub and oriental spicy notes, with reminiscences of turmeric. On the palate it is soft, dense and enveloping, the slight tannicity completes the sip together with a marked salinity. To accompany Asian cuisine
