Diego Bosoni's Bianco Frizzante 'L'Incantatrice' is an enchanting refermented wine produced in an artisanal way by a historic Ligurian company. This yeast-based refermented wine is produced to restore all the marine and territorial imprint of its land. 'L'Incantatrice' Bianco Frizzante is a refined and fragrant bottle-refermented wine produced by Diego Bosoni, a descendant of the Bosoni family, owners of the celebrated Ligurian winery Lunae Bosoni. For his exciting individual project, Diego decided to focus on the territory, emphasising local varieties such as Albarola, Malvasia and Vermentino, the latter being the Bosoni's main grape variety. The vineyards are located in the area between the Apuan Alps and the municipality of Castelnuovo Magra, in an area characterised by a peculiar microclimate, the result of the encounter between the cold mountain air and the mild sea breezes blowing from the Ligurian Sea. The illustration of a mermaid that distinguishes the 'L'Incantatrice' label is then the work of artist Rita Pedullà.
The Bianco Frizzante Diego Bosoni 'L'Incantatrice' comes from a blend of white grapes grown on steep hilly terrain. In the winery, the bunches undergo soft pressing under nitrogen to protect the must from oxidation, which is then conveyed into stainless steel tanks for temperature-controlled alcoholic fermentation. The fermentation process is then halted through a sudden lowering of the temperature, and then continued in the bottle so as to realise re-fermentation according to the Ancestral Method.
Diego Bosoni's Frizzante Bianco 'L'Incantatrice' has a pale golden yellow colour. The aromatic bouquet is elegant and intense, described by aromas of yellow fruit such as apple that blend with notes of lavender and lemon peel, as well as subtle hints of iodine and yeast. On the palate, the initial breadth and envelopment is soon tempered by the excellent freshness that defines a vertical progression, marked by delicate aromatic tones on the finish.
