The ‘Clos de la Maladière’ Beaune Rouge from Domaine Cauvard is a pure Pinot Noir that stands out for its depth and elegance, positioning itself as a prestigious expression of a monopole vineyard in the Côte de Beaune. Despite the predominance of white wine production from Chardonnay grapes in this area, with peaks of excellent quality, the AOC of Beaune represents a remarkable exception as over 80% of the total production of the denomination is reserved for red wines. It is here that Domaine Cauvard cultivates its flagship vineyard in monopoly: the ‘Clos de la Maladière,’ a lieu-dit located at the gates of the city of Beaune.
Domaine Cauvard Beaune Rouge ‘Clos de la Maladière’ is made from 100% Pinot Noir grapes grown sustainably on soils characterized by an abundant presence of clay and limestone. The harvest is carried out entirely by hand, and once in the winery, the grapes are fermented in stainless steel tanks with skin contact. After the fermentation process, the wine is aged for several months in French oak barrels, and before the final bottling, only a light filtration is performed to remove the coarser particles without affecting the wine's organoleptic properties.
In the glass, the Beaune Rouge ‘Clos de la Maladière’ displays an intense and luminous ruby red color. The aromatic bouquet unfolds with fragrant fruity notes of cherry, cranberry, and strawberry, enriched by complex hints of undergrowth and mushrooms and sweet spicy notes reminiscent of vanilla. The palate entry is dry and rounded, soon enlivened by crisp freshness and delicate tannins that precede a long-lasting fruity and spicy finish.
