Organic wines are territorial expressions produced in compliance with European legislation that prescribes the use of only organic grapes, with restrictions on the use of sulphites and oenological products during wine making. To meet these requirements and thus be able to bring on the label the famous green logo with the leaf formed by 12 stars that certifies organic production, producers may not use either synthetic chemicals or genetically modified organisms in the vineyard and, in the cellar, may only use certified oenological products, limiting the use of sulphites .
